While you can use canned chickpeas, freshly cooked gives a much nicer salad!

Moroccan Chickpeas

Makes 6 servings

Ingredients

  • 3 cups chickpeas cooked (or 2 cans)
  • 1 large grated carrot
  • 1/4 cup sultanas
  • 1/4 cup diced dates
  • 1/4 cup aioli (or any healthy salad dressing)
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/4 cup parsley
  • 2 tablespoons sweet chilli sauce
  • 1/2 cup date puree or 2 tablespoons honey
  • 1 cup green beans frozen and lightly steamed

Method

Assemble all ingredients and mix in a bowl
