While you can use canned chickpeas, freshly cooked gives a much nicer salad!
Moroccan Chickpeas
Makes 6 servings
Ingredients
- 3 cups chickpeas cooked (or 2 cans)
- 1 large grated carrot
- 1/4 cup sultanas
- 1/4 cup diced dates
- 1/4 cup aioli (or any healthy salad dressing)
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1/4 cup parsley
- 2 tablespoons sweet chilli sauce
- 1/2 cup date puree or 2 tablespoons honey
- 1 cup green beans frozen and lightly steamed
Method
Assemble all ingredients and mix in a bowl
