This is a delicious sweet treat that contains no dairy, relatively little oil, no processed wheat flour and no refined sugar.
Plum & ginger slice
Makes 14 large slabs
Ingredients
- 20 plums canned (1 large tin)
- 2 cups date puree (1 cup water + 1 cup dates blended)
- 1/4 c rice bran oil
- 1 cup coconut shredded
- 1 cup rice flour (wholemeal preferable)
- 4 cups oats
- 1/2 cup sesame seeds
- 1/2 cup ground almond
- 2 teaspoons ground ginger
Method
- mix all ingredients (except plums) in a large mixing bowl
- halve the oat mixture
- get a baking tray approximately 200x300mm – brush lightly with oil
- press out half of mixture onto the baking tray
- drain the plums well and take out the stones – place on top of the oat base
- press out the remaining oat mixture on the bench and place on top of the plums – be careful not to push the ingredients around too much
- bake for 30 minutes at 180 degrees or until golden brown
- cool and then cut into slabs with a serrated knife
