Hummus is my most favourite dip. It is cheap and very easy to make with a little planning. It is great as a dip with pita bread or rice crackers. Also awesome on many meals and a great sandwich filler.
Hummus
Ingredients
- 3 Cups of Freshly cooked chickpeas (or 2 x 400g cans)
- 1/2 teaspoon of salt
- 2 cloves of garlic crushed
- 1 tablespoon tahini (ground sesame seeds)
- 1/4 cup oil (I prefer rice bran – olive oil’s strong flavour tends to over power) – you can adjust the level of this and replace with water for a lower fat option
- 1/4 cup water
Method
- Put all ingredients in food processor and blend until smooth! You can also use a stick blender – but not a normal blender as the mixture is too thick
- Taste. Note all batches are different as salt, chickpeas, lemon juice always have different flavours and consistency
- Add water/oil/salt as needed. You should be able to taste every ingredient slightly, with not too much of 1 ingredient coming through
